Lightweight
Pizza
4-6 rice cakes
250 ml (1cup) diced pepperoni
250 ml (1 cup) diced salami
500 ml (2 cups) shredded mozzarella cheese
1-2 diced small onions
1 diced green pepper
1 diced red pepper
500 ml (2 cups) sliced mushrooms
125 ml (1/2 cup) sliced olives
25 ml (2 Tbs) pizza spices (optional)
250 ml (1 cup) pizza sauce (heated)
* Place sliced mushrooms evenly on the bottom of 4-6 microwavable
dishes approximately 6" round by 1" deep.
* Sprinkle desired amount of onions and peppers over mushrooms.
* Cover with layers of pepperoni and shredded cheese.
* Crumple rice cakes over cheese, spread evenly.
* Sprinkle with desired amount of pizza spices, onions
and peppers.
* Cover surface with diced salami.
* Top with sliced mushrooms, olives and cheese.
* Cook EACH dish in microwave for 2-3 minutes on HI.
* Heat pizza sauce and spread desired amount over surface.
Variation: Try pizza without meat and use a light or low fat cheese.
